
Since canned chestnuts are easy to find all year, this delicious smoothie doesn’t have to be a winter-only treat.
½ cup ice
½ cup roasted, peeled chestnuts (fresh or canned)
1 banana, peeled and broken into pieces
¼ cup unsweetened coconut milk
1 tablespoon honey
¼ teaspoon vanilla extract
Combine all the ingredients in a blender. Cover and pulse on and off until
the mixture starts to swirl evenly. Blend on high for 20 seconds, or until
the drink is completely smooth.
Variations
CINNAMON CHESTNUT SMOOTHIE Add ¼ teaspoon ground cinnamon
before blending.
CRANBERRY CHESTNUT SMOOTHIE Add 1 tablespoon cranberry
sauce before blending.
GUILT-FREE CHESTNUT SMOOTHIE Omit the coconut milk. Add ¼
cup skim milk before blending.
ORANGE CHESTNUT SMOOTHIE Add 1 tablespoon orange juice concentrate,
thawed, before blending.
PEACH CHESTNUT SMOOTHIE Omit the banana. Add 1 small peach,
pitted and sliced, before blending.
