
This delicious chocolate smoothie is perfect for your vegan and lactoseintolerant guests—or for anyone who just wants to avoid dairy.
1 cup ice
2 tablespoons peanut butter
½ cup soy milk
¼ cup chocolate syrup
1 banana, peeled and broken into pieces
Combine all the ingredients in a blender. Cover and pulse on and off until
the mixture starts to swirl evenly. Blend on high for 20 seconds, or until
the drink is completely smooth.
Variations
ALMOND CHOCOLATE SOY SMOOTHIE Omit the peanut butter. Add
2 tablespoons almond butter and 1/8 teaspoon almond extract before
blending.
CASHEW CHOCOLATE SOY SMOOTHIE Omit the peanut butter. Add
2 tablespoons cashew butter before blending.
CHEWY CHOCOLATE SOY SMOOTHIE Add 1/3 cup granola before
blending.
CHOCOLATE MALTED SOY SMOOTHIE Add 2 tablespoons malted
milk powder before blending.
VANILLA SOY SMOOTHIE Omit the chocolate syrup. Add ¼ cup vanilla
syrup before blending. If desired, use vanilla-flavored soy milk.
